From my friend's grandma...the pineapple really makes it so moist & yummy! ZUCCHINI BREAD 3 eggs 2 t. baking soda 3 C flour ½ t. baking powder 1 C vegetable oil 1 t. salt 1-1/2 C sugar 1-1/2 t. cinnamon 2 t. vanilla ¾ t. nutmeg 2 C coarsely shredded zucchini 1 can (8-1/4 oz.) well-drained crushed pineapple 1 C raisins 1 C chopped nuts (optional)
Beat eggs to blend. Add oil, sugar, and vanilla; continue beating until thick and foamy. With a spoon, stir in zucchini and pineapple. Add remaining ingredients, stirring gently until just blended.
Divide batter equally between 2 well-greased and floured 5 x 9 inch loaf pans.
Bake @ 350 x 1 hour or until done (toothpick inserted in center comes out clean). Cool in pans x 10 min; turn out on wire racks to cool thoroughly. OR using large baking cups, will make 40 muffins. Bake at 350 x 25 min.
